Our olive trees grow on red earth coastal hills, heated by the sun and reached by sea breezes.

These oils transmit the extraordinary qualities of the Maremma terroir and its close connection with nature.

In our olive groves we cultivate varieties such as: the Frantoio, the Moraiolo, the Leccino, the Pendolino and the Leccio del corno.

The harvest is strictly done by hand to let us select the fruits one by one and let them unchange the integrity and the freshness. 

The passion for what we do is reflected in our oil, an extra virgin olive oil with an authentic flavor, of great character, which expresses at best the terroir where it is produced and the traditions of our family.

TO THE NOSE

It has a medium intensity fruitness with clear strongly floral notes even if not invasive. A really interesting aroma.

ON THE PALATE

 

A balanced taste, that differs from nose scents with a well-balanced bitter that releases a clear hint of chicory. The spiciness is persistent but not agressive.

 

 

 

MATCHING WHIT FOOD

 

A special extra virgin olive oil, very interesting to use for its not agressive character combined with its distinctive bitter note of chicory.

Perfect to balance sweet trend dishes, to try whit a potato, cabbage, cereals or bean soup.

Ideal to complete a fettuccina whit mushrooms, for who doesn't love the too intense oils, it's good for sliced meat.

TO THE NOSE

It presents a clean medium intensity fruity, whit clear notes of ripe fruit, of banana, whit a final note reminding musk.

ON THE PALATE

 

Extremely equilibrate and elegant taste, whit bitter and spicy finely persistent. Characterized by a particularly soft entry into the mouth..

 

 

 

MATCHING WITH FOOD

 

It is particularly suited to accompany low-acid dishes, whith a round taste which doesn’t despise a bitter note. Perfect with soft and full-bodied cheeses or to finish to whisk a creamy risotto.

Ideal for sweet-tasting vegetables, potatoes, freshly baked carrots and onions or vegetable casseroles with particular flavors such as cabbage and pumpkin.

But it is an oil, thanks to its balance, good for any utilization in the kitchen and for anyone loving elegance and finesse.
